How to make  Papaya Atchara

 Atchara made in Calaca

One of the best product of Calaca is Atchara. It is one of the appetizer that served for the celebration especially during the fiesta in our barrio.  It is made up of grated green papaya, placed in a small air tight conatiner and soked for a week in cooked vinegar and sugar with carrots, onion, garlic, pepper corn and red bell peper.

Ingridients:
  • 4 lbs of grated green papaya 
  • 2 medium sized of carrots (sliced)
  • 1 large onion (thinly sliced)
  • 10 cloves of garlic (thinly sliced)
  • 2 tbsp. of pepper corn
  • 1 large red bell paper (cut into strips)
  • 1 knob of ginger (cut into strips)
  • 1/4 cup of salt to dehydrate papaya
  • 1 1/2 of salt to tbsp. for the syrup
  • 2 cups of white vinegar
  • 1 1/2 of sugar
Step by step cooking procedure:
1. Place the grated papaya into a large bowl and combine 1/4 salt in the grated papaya until the slat is well distribured.
2. Cover the bowl and place inside the refrigerator overnight (the salt will dehydrate to the grated papaya). 
3. Place the grated papaya in a strainer then rinse with the running water.
4. Using any clean cloth or cheese cloth as a container, then put the papaya inside the cloth and squeeze it until the liquid comes out.
5. Put the papaya back into the large bowl and combine with carrots, garlic, onion, whole pepper corn and red bell paper.
6. Heat the pan and pour vinegar and wait until it boils.
7. Add the sugar and 1 1/2 tbsp. salt then stir until diluted.
8. Turn off the heat and wait to cool down the temperature of syrup.
9. Placed the combine vegetables and spices in the airtight jar and put the syrup.
10. Seal the jar and place inside the refrigerator for five days to achieve the good flavor.
11. Ready to serve your appetizer in the table.
